Thanksgiving Sweet Potato Casserole
Ingredients
4 cups sweet potato, cubed
1/2 cup white sugar
2 eggs, beaten
1/2 teaspoon salt
4 tablespoons butter, softened
1/2 cup milk
1/2 teaspoon vanilla extract
1/2 cup packed brown sugar
1/3 cup all-purpose flour
3 tablespoons butter, softened
1/2 cup chopped pecans
Directions
Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash. (I cooked about 30 minutes)
In a large bowl, mix together the sweet potatoes, sugar, eggs, salt, butter, milk and vanilla. Mix until smooth. Transfer to a 9x13 inch baking dish.
In medium bowl, mix the sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.
Bake at 325 degrees F oven for 30 minutes, or until the topping is lightly brown.
Yam and Apple Casserole
Ingredients
4 large yams
3 tablespoons butter
1 tablespoon cornstarch
1/2 cup packed brown sugar
1 1/2 cups apple juice
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
3 large apples - peeled, cored and sliced (I used Granny Smith)
Directions
Place yams in a large saucepan with enough water to cover. Bring to a boil, and cook 30 minutes, or until tender but firm. Drain, peel, and cut into 1/3 inch thick slices.
Preheat oven to 375 degrees F. Lightly grease a 9x13 inch baking dish.
In a small saucepan over medium heat, melt the butter with the cornstarch and brown sugar. Mix in the apple juice, lemon juice, cinnamon, and allspice.
Alternate layers of yams and apples in the prepared baking dish. Pour the apple juice mixture over the layers.
Cover, and bake 1 hour in the preheated oven. Remove cover, and continue baking 30 minutes. Baste frequently with the juices from the pan to prevent drying.
This Thanksgiving I was in charge of Yams. Dan's family normally makes the yam/apple recipe; so I made that and also made my favorite, sweet potato with pecans. That was a hit! I'm glad everyone liked it. Here are the recipes I used...enjoy!
